Dan Dan Noodles Dish Guide

Serves 4

Dan Dan Noodles

2 T chili paste

2 T sesame paste

4 T soy sauce

3 garlic cloves, minced

2 T white sugar

½ t five spice powder

1 t ground sichuan peppercorns

2 T chili oil

¾ cup chicken stock

1 lb fresh cooked noodles*

2 baby bok choy, cut in half

Pork Topping

1 lb ground pork

3 T hoisin sauce

2 T dark soy sauce

2 T Chinese cooking wine (Shaoxing)

½ t five spice powder

1 T cooking oil

Garnishes

Green onions

Chopped peanuts

Mix dan dan sauce ingredients together (from chili paste to chicken stock). Mix pork seasoning ingredients together (from hoisin to five spice).

Heat skillet or wok over medium high heat. Add in 1 T of oil and the pork. Cook and crumble into fine pieces. Once mostly cooked, add in the pork sauce and stir to combine. Cook out for 1 minute. Remove from pan and add in the box choy halves, cut side down. Cover with a lid or foil and cook until tender and seared on the cut side, about 4-5 minutes. Remove from skillet.

Add in dan dan sauce and cooked noodles and toss to combine. Cook until sauce is warm and noodles have thoroughly absorbed the sauace.

To plate, serve the noodles in a bowl topped with some of the pork, a piece of bok choy and garnished with chopped peanuts and sliced green onions.

*We used pre-cooked noodles that just needed to be heated through. They can often be found on the international aisle of your grocery store. If you use fresh noodles or dried noodles, cook slightly less than the package directions in boiling water and then add to the sauce to combine.
