Marry Me Chicken Dish Guide

Serves 4

4 chicken breasts

3 cloves garlic, minced

1/3 cup sundried tomatoes, diced

T fresh oregano leaves

T fresh basil, chopped

1 cup chicken stock

1 cup heavy cream

½ t red pepper flakes

½ t dried thyme

Freshly grated parmigiano Reggiano cheese, to taste

2 T unsalted butter, coated in AP flour

2 T olive oil

Salt and Pepper to taste

Cooked rice or pasta for serving

In a large skillet over medium-high heat add the olive oil and chicken breasts. Season with salt and pepper. Sear on both sides for 3-4 minutes. Remove from the skillet and add in the garlic. Cook for 30 seconds and then deglaze the skillet with the chicken stock. Scrape all the fond off the skillet. Add in the pepper flakes, thyme and cream. Return the chicken to the pan along with any resting juices.

Cook until the chicken is cooked through (165 F internally).

Remove chicken and grate in fresh parmesan cheese and add the oregano and sundried tomatoes. Add the butter coated in flour and stir constantly until thickened. If sauce gets too thick, add a splash of stock. Taste sauce and add salt and pepper if necessary. Return the chicken to the skillet to coat in sauce and serve immediately with rice or pasta.
