Vegan Burger Dish Guide

For the Burger

12 oz cooked black beans, drained and dry

1 cup walnuts

½ a medium white onion, diced

1/3 cup panko breadcrumbs

1 cup cooked and cooled brown rice

¼ cup vegan bbq sauce

1 T Vegan Worcestershire sauce (or Soy Sauce or Tamari)

1 T brown sugar

1 T chili powder

1 T smoked paprika

1 T garlic powder

1 T cumin

1-2 T olive oil for cooking

Salt and Pepper to taste

Toast the walnuts in a dry pan over medium heat for 5-6 minutes until fragrant.  Be careful to move them regularly or they will burn quickly due to the high content of fat.  After removing them, add 1 T of olive oil and sauté the onion for 7-8 minutes until soft and translucent.  Transfer the walnuts to a blender and add the sugar, chili powder, paprika, garlic powder, cumin, salt and pepper and blend to combine. 

In a bowl add the black beans and using a fork or potato masher, crush them up so they are about 25% whole beans and 75% mashed.  (Note: a the 14.5 oz can of black beans only has 1 and ¼ cup of black beans due to the liquid content so you will need more than one can if using canned beans).  Add all remaining ingredients and mix well.  Taste for seasoning and form into patties.

In a skillet over medium heat add the remaining T of oil and cook the patties for 4-5 minutes per side.  You can also bake them at 375 for 15-20 minutes until warmed through.  The sugar in the patties will help the outside of the patties brown but be careful not to let them burn (like we did!).

We plated ours up with a vegan mayo and traditional onions, lettuce, tomato, pickles and mustard but you go with whatever toppings you like best!

For the Vegan Chipotle Mayo

1 cup cashews

2 cups hot water

1 chipotle in adobo (or more!)

1 T lime juice (about half a lime)

1 garlic clove

1 T apple cider vinegar

¼ cup cold water

Salt and Pepper to taste

Soak the cashews in the hot water for 30 minutes.  Drain them and add to a blender or food processor.  Add all the remaining ingredients and blend thoroughly to combine.  Taste for seasoning and use as a mayo substitute for all your vegan dishes!
