Pad See Ew Dish Guide

Serves 4

12 oz wide rice noodles*

1 T dark soy sauce

2 T oyster sauce

2 T light (regular) soy sauce

1 T rice wine vinegar

½ t toasted sesame oil

1 T brown sugar

3 T oil for frying

1 T freshly minced garlic

12 oz thinly sliced chicken breast or thigh

2 eggs

5-6 Chinese broccoli stems**

Minced cilantro and lime wedges for serving

Mix dark soy, oyster sauce, light soy, sesame oil, vinegar and sugar in a cup and stir to combine.

Prepare rice noodles per package directions and leave aside.

Dice the thick parts of the broccoli stems and cut the leaves into large chunks as they will wilt.

Add 2 T oil to a wok or large skillet over high heat and add the garlic and cook until fragrant. Add in the chicken and cook, stirring constantly, until just cooked through (about 2 minutes). Add in the broccoli and cook for 1-2 minutes more or until leaves are wilted. Move everything to one side of the wok and crack in the 2 eggs in the empty side. Let cook for 1 minute then begin to scramble and fold in with the chicken. Once completely incorporated, remove everything from the wok, wipe it out, and add in the remaining T of oil.

Add in the cooked rice noodles (don’t worry about draining them too thoroughly, a little water will help loosen the sauce). Add in the sauce and stir to combine. Cook over high heat for 1-2 minutes or until the sauce has fully coated the noodles and some are getting a bit charred or sticky on the bottom of the wok. Return the chicken and egg mixture to the wok and stir everything until fully combined. Serve immediately garnished with fresh cilantro and lime wedges.

*Your grocery store may not have wide rice noodles that are traditional in Pad See Ew so either order some off the internet or substitute with thinner rice noodles commonly found in most western supermarkets.

**Like the wide rice noodles, Chinese broccoli (gai lan) is not found in your average supermarket so you will either need to go to your local Asian grocery store or substitute another leafy green like bok choy or broccolini.
