Slow Cooker Corned Beef and Cabbage

Serves 6

4 carrots, roughly chopped

1 onion, diced

8-12 baby red or Yukon potatoes, quartered

1 ~4 lb corned beef brisket with seasoning packet

4 cups chicken stock

¼ cup whole grain mustard

½ head of cabbage, roughly chopped

Salt and pepper to taste

Yellow mustard and parsley for serving

Add the onions, carrots and potatoes to a slow cooker. Season with salt and pepper. Add the brisket and spice packet followed by the mustard and stock. Set to cook on high for 7 hours. Flip the brisket halfway through cooking.

Add the cabbage and cook for an additional 30-60 minutes on high. Remove the vegetables to a serving platter. Slice the brisket and serve garnished with parsley for the necessary green color and yellow mustard for dipping.
