Sweet and Sour Pork

Sweet and Sour Pork Dish Guide

Serves 4-6

1.5 lb pork tenderloin cut into 1” pieces

1 T minced garlic

1 T minced ginger

1 small onion, diced

1 green bell pepper, diced

1 red bell pepper, diced

8 oz can of pineapple chunks in pineapple juice, partially drained

2 T olive oil

½ cup honey

1/3 cup rice vinegar

¼ cup soy sauce

1 T sriracha

3 T tomato paste

1 T corn starch

2 T water

Salt and pepper to taste

Diced scallions for garnish

Sesame seeds for garnish

Mix ingredients between honey and water in a bowl and whisk thoroughly to combine.

In a wok or large skillet over medium high heat add in the olive oil. Add in the pork and sear on both sides for 2-3 minutes (work in batches if you need to). The pork will not be cooked through yet. Remove and set aside.

Add in the garlic and ginger and cook for 1 minute. Add in the onions and peppers and cook for 2-3 minutes. Whether you use a wok or skillet you want to be stirring almost constantly. Add in the pineapple and a bit of the juice. Continue cooking for another 2 minutes. Return the pork along with any accumulated juices. Season with pepper and a pinch of salt but not too much as there is a lot of salt in the soy sauce.

Add in the sweet and sour sauce and stir. Bring it to a simmer and reduce heat to medium low. Cook until sauce has thickened to your liking and pork is fully cooked.

Serve over steamed rice or noodles garnished with green onions and sesame seeds.
