Five in 25
Serves 2
Five Ingredients
2 eggs
1 lb 16-20 peeled and deveined shrimp
1 T old bay seasoning
2 T unsalted butter
1 lemon or lime
From the Pantry
¾ cup flour
¼ cup olive oil
6-8 garlic cloves, minced
Spread the flour and old bay in a large plate or dish and season lightly with salt and pepper. Use a fork to thoroughly mix the seasoning in the flour. In a second dish, crack the eggs and beat them thoroughly. Coat the shrimp in the flour, then in the eggs and finally back in the flour. Set aside and repeat until all shrimp are battered.
In a large skillet, add the olive oil and heat over medium high heat. Lay the shrimp in and cook for 2-3 minutes or until the first side is golden brown and crisp. Flip and add in the butter and garlic. Cook for 1-2 minutes more ot until garlic is turning light brown and shrimp are just cooked through. Squeeze in the juice of half a lime or lemon and remove from heat.
Serve immediately with more citrus wedges. Suggested sides would be rice and macaroni salad but the shrimp are a great appetizer or go great on a fresh green salad.
