Harissa Orange Glazed Salmon Dish Guide

1 package rice blend*

16 oz salmon fillets

1/3 cup harissa pasta

1/3 cup orange marmalade

1 bunch baby broccoli/broccolini

1 t red wine vinegar

2 T olive oil

Preheat the oven to 450F. Cook the rice per package directions and set aside to keep warm. Add the broccoli to a sheet pan and drizzle with 1 tablespoon of olive oil and season with salt and pepper. Toss to thoroughly season and bake for 5 minutes.

While the broccolini bakes, mix the harissa, orange marmalade and vinegar along with a pinch of salt and pepper into a paste.

Remove the broccolini from the oven after 5 minutes and set to one side of the sheet pan. Brush another tablespoon of oil on the sheet tray and lay down the salmon fillets. Coat salmon generously with the harissa orange glaze. Return to the oven for 8-10 minutes or until salmon is cooked to your liking and broccolini is bright green and beginning to look roasted around the florets. If you like your broccolini more tender, cook it longer at first or give it a head start for 2-3 minutes in the microwave before roasting.

To serve, lay down a bed of rice followed by a salmon fillet and a stalk or two of broccolini. Optionally garnish with fresh herbs or a squeeze of lemon.
