Honey Chipotle Shrimp Skewers
Serves 4
Five Ingredients
1 lb peeled and deveined shrimp
1 lb fresh cut pineapple chunks
¼ cup honey
3-4 minced chipotle peppers in adobe
2 cups cooked white rice (microwaveable or freshly steamed)
Soak 8-10 wooden skewers in water and preheat your grill to 450 F. If you don’t have a grill, you can use your broiler. Cook your rice if not using microwaveable pre-cooked rice.
In a large bowl add the honey, chipotles, shrimp and pineapple. Cut pineapple into bite size chunks if using a whole pineapple. We recommend fresh store-cut chunks as a time saver. Season with salt and pepper and stir everything to combine.
Skewer the pineapple and shrimp on the skewers. Grill for 3-4 minutes a side until shrimp are cooked through and pineapple chunks are caramelized.
Serve 2 skewers over a bed of rice. Optionally garnish with fresh chopped parsley, cilantro or green onions and a squeeze of lime juice.
