Maple Mustard Chicken Dish Guide

2 8 oz Chicken Breasts

¼ cup whole grain mustard

¼ cup maple syrup

1 shallot

1 lb baby red or Yukon gold potatoes

From the Pantry

¼ cup + 1 T olive oil

Preheat oven to 450 F with convection if possible.

Slice the potatoes in halves or quarters depending on size. Place on a sheet tray and drizzle with ¼ cup olive oil. Season with salt and pepper and toss to coat. Place in a single layer on the sheet tray, cut side down.

Finely mince the shallot and place in a bowl. Add the mustard and syrup along with 1 tablespoon of olive oil and a pinch of salt and pepper. Stir to combine. Place the chicken on the sheet pan and brush with half the mustard mixture. Bake for 10 minutes, brush the remaining mustard mixture on the chicken and bake for 10 minutes more or until cooked to 160F internally.

Serve immediately garnished with fresh herbs if desired.
