Pimento Grilled Cheese Dish Guide

8 oz sharp cheddar cheese
4 oz diced pimentos, drained
¼ cup mayonnaise
4 oz cream cheese (room temperature if possible)
1 loaf hearty sandwich bread
From the Pantry
Olive oil as needed
Grate the cheese and add to a large mixing bowl. Add in the pimentos, mayo and cream cheese and season with salt and pepper. Stir thoroughly to fully combine. Spread some of the mixture onto a slice of bread and top with another slice. Add some olive oil to a skillet over medium low heat and toast both sides of the bread until the outsides are golden brown. Serve immediately and caution: contents will be messy!
