Sesame Ginger Shrimp Pasta

Five Ingredients

8 oz linguine

1 lb raw peeled and deveined shrimp

¾ cup sesame ginger salad dressing

2 cups snap peas

1 bunch scallions

From the Pantry

2 cloves garlic, crushed

2 T olive oil

Bring a large pot of water to a boil and season with salt. Cook pasta per package directions.

Dice the whites and light greens of the scallions and slice the darker greens for garnish.

While the pasta is cooking, add the oil to a large non-stick skillet over medium high heat. Thoroughly dry the shrimp and add to the skillet. Season with salt and pepper. Microwave the snap peas for 3-4 minutes to steam.

Add the garlic and scallion whites to the skillet along with the snap peas. Stir and cook for 1 minute. Add in the cooked pasta along with a splash (about 1/3 cup) of the cooking water. Add the dressing and turn off the heat. Stir to combine everything. Taste and add more seasoning or dressing as desired.

Serve immediately garnished with the scallion greens.
