Crab Rangoon and Egg Rolls

Crab Rangoon Dish Guide

8 oz crab meat

8 oz cream cheese

1 t Old Bay seasoning

1 t Worcestershire sauce

2 scallions finely minced

Salt and Pepper to taste

Wonton wrappers

Neutral oil (like canola or vegetable) for frying

Mix all ingredients except the wonton wrappers in a bowl. Spoon about a teaspoon of filling into each wrapper and bring the sides together gently and seal to form the rangoon (watch the video for demonstration). Heat oil in a medium size pot to 350 degrees and fry the rangoons about 6 at a time for 2 minutes or until golden brown. Remove from the oil and drain to remove excess oil.

Sweet and Tangy Sauce Dish Guide

1 T brown sugar

1 T rice vinegar (or apple cider vinegar)

1 t sambal (or Sriracha)

1/4 cup ketchup

2 T water

Combine all ingredients and whisk to homogenize.

Pork Egg Roll Dish Guide

3/4 lb (12 oz) ground pork

1 T sambal

2 T oyster sauce

1 T minced fresh ginger

2 minced garlic cloves

3-4 minced scallions

1 bag (about 12 oz) cole slaw mix

Egg Roll wrappers

1 beaten egg

Neutral oil for frying

Salt and Pepper to taste

Cook the ground pork over medium heat and break it up into small pieces. Once cooked add the ginger, garlic, sambal, oyster sauce, scallions and cole slaw mix. Stir to combine and cook for 3-4 minutes until the cabbage begins to soften. Lay out your egg roll wrappers and place about 1/4 cup of the filling in the middle of the wrapper. Fold one corner over top of the filling and then fold in both sides. Brush the last corner with the beaten egg and continue rolling until sealed. Heat the oil to 350 degrees in a skillet and fry the egg rolls for 2-3 minutes per side until golden brown. Drain thoroughly on a paper towel for 5 minutes and serve.

Dish Notes

You can make the rangoon with imitation crab (Krab) if you don't like the stronger flavor of fresh crab, are trying to cut cost, or are allergic to shellfish. For the sauce we initially intended to add in a couple tablespoons of minced pineapple as well for a more traditional sweet and sour but completely forgot. You should do that ... and let us know how it is. The egg rolls can be made vegetarian by swapping out the pork for minced mushrooms or tofu. Make them vegan by exchanging the oyster sauce for half that amount of dark soy sauce and using water to seal the wrapper. Finally, for a healthier alternate you can brush the outside of the egg rolls with the egg wash and bake at 400 degrees for 15-20 minutes or until brown. They won't be quite as crunchy though :(
