"Western" Baked Eggs Dish Guide
15 Eggs, cracked and beaten thoroughly
Half a green pepper, minced
1/4 of a red onion, minced
4 oz feta cheese
4-5 slices of deli ham, minced
Cajun seasoning
1 T olive oil
Whisk the eggs thoroughly and add the Cajun seasoning to taste. Using a brush or paper towel, oil up the bottom and sides of the molds on a muffin pan. Use a 1/4 cup measure to spoon the eggs into the individual molds on the muffin pan so that they are about 2/3 full. Sprinkle in a few of each of your "toppings" to each egg and stir gently to ensure the ingredients are mixed throughout the egg. Bake at 375 for 20 minutes or until the eggs are just cooked through. Cool on wire rack and store in the fridge for up to 4 days or tightly sealed in the freezer for up to 3 months. Just remember to pop them in the fridge overnight to defrost for easy re-heating in the morning!
Dish Notes
You can add a splash of dairy (milk or cream) to the beaten eggs for extra volume and richness. If you're super short on time, just crack the eggs into each muffin mold and toss your ingredients and seasonings in without beating. This recipe will make 12-16 egg bites depending on the size of your muffin pan. Pretty much anything you can put in an omelette you can put in these so mix it up! Variety is the spice of life and that certainly applies to cooking.
