Five Ingredients (per burrito)

2 Eggs

3 Sausage links

2 T salsa or pico de gallo

1 large flour tortilla

2 oz shredded cheese

From the Pantry

2 T olive oil

Cook the sausages in a tablespoon of oil until browned and cooked through. Scramble the eggs and cook in the sausage fat and season with salt and pepper. Lay down some cheese on a tortilla and microwave for 30 seconds. Add the scrambled eggs and sausages to the tortilla along with the salsa. Roll up, tucking ends in as you roll.

Toast on all sides in 1 tablespoon of olive oil in a skillet if desired. Serve with more salsa, sour cream and hot sauce.
