Chipiotle Chicken Taquitos

2 cups shredded rotisserie chicken
1 cup shredded Mexican cheese blend
2 T chopped chipotle in adobo
12-15 6” flour tortillas

2 T olive oil
Add the shredded chicken, cheese and chipotles to a bowl along with a tablespoon of oil. Season with salt and pepper and mix thoroughly.
Place about 1/3 cup mixture in the center of a tortilla and form into a log. Roll the tortilla tightly over the mixture and roll up like a cigar. Secure with a toothpick if desired. Repeat until you have used all the chicken.
Add taquitos to an air fryer and brush with olive oil. Cook at 375 F for 10-12 minutes or until golden brown and warmed through on the inside. If using a conventional oven, cook at 400 F for 15-18 minutes (using convection if possible).
Serve immediately topped with more cheese and sour cream. Other great toppings include shredded lettuce, tomatoes, guacamole, sour cream, and hot sauce.
