Orange Sesame Salmon

Serves 4

Five Ingredients

4 six ounce salmon filets

2 T dark soy sauce

1 orange

2 T tuxedo blend sesame seeds

2 packages microwaveable brown rice

From the Pantry

2 T olive oil + more for baking sheet if needed

2 t dijob mustard

Turn on the broiler. Microwave brown rice and set it aside to keep warm.

Zest the orange and cut in half. Juice half into a bowl and slice the other half for serving.

To the bowl of orange juice add soy, olive oil, orange zest and mustard. Stir to combine.

Brush or spray some additional oil on a baking sheet and lay down the salmon. Brush generously with the marinade and sprinkle on some sesame seeds to each filet. Place under the broiler for about 4 minutes. Remove and brush with the marinade once more. Season lightly with salt and pepper. Return to the broiler for another 4-5 minutes or until deeply browned and cooked to your liking.

To serve, lay down a bed of rice and top with some sliced oranges. Lay down a salmon filet and optionally garnish with green onions and/or more of the marinade.
