Pulled Pork Flautas

Five Ingredients
1 lb. pulled pork or shredded carnitas*
6 oz grated pepper jack cheese
¾ cup salsa verde
10-12 flour tortillas (taco size)
Guacamole (to taste)
From the Pantry
Olive Oil (as needed)
Preheat oven to 400F.
Add the cheese, pork and salsa to a bowl and mix well. Taste and season with salt and pepper if needed.
Spoon mixture into the middle of taco shell and roll tightly into a rolled taco shape. Place seam side down on a baking tray brushed with olive oil. Repeat with remaining taco shells until the filling is consumed. Brush the top of taco shells with olive oil. Place in oven and bake for 10-12 minutes or until filling is warm and cheese is melted and taco shells are beginning to brown and get crispy.
To serve, plate and top with guacamole. Other toppings that would be great would be cilantro, sour cream, pico de gallo, other salsas, etc.
*We used seasoned pulled pork from a local deli. You could use smoked pork shoulder from a local BBQ place as long as it wasn’t coated in a sweet sauce, or buy carnitas from a local Mexican restaurant or food truck.
