Mediterranean Chicken

Five Ingredients

2 Large chicken breasts (about 1.5 lbs total)

12 oz cherry or grape tomatoes

2 T capers, drained

1/3 cup pitted and sliced kalamata olives

6 oz feta cheese

From the Pantry

3 T olive oil

Preheat oven to 400 F.

Preheat oven-safe skillet over medium high heat and add the olive oil. Lay in the chicken breasts and season generously with salt and pepper. Sear for 4-5 minutes on the first side and flip. Add the tomatoes, olives and capers. Crumble in most of the feta. Bake for 12-15 minutes or until chicken is cooked through to 160 F.

Remove and garnish with remaining feta. Additional garnishes like fresh herbs and balsamic glaze would be delightful.

Serve immediately with pasta, grain or salad greens.
