Strawberry Chipotle Pork Chops

4 thick, center cut pork chops
8-12 strawberries
2-4 chipotle peppers in adobo
1 T honey
5-6 green onions
From the Pantry
1 T red wine vinegar
2 T olive oil
Preheat your oven to 375 F.
Add the olive oil to a skillet over medium high heat. Lay in the pork chops and season with salt and pepper. Sear the first side for 3-4 minutes. Flip, season with salt and pepper and then place in the oven. Cook to 135 F internal (about 8-10 minutes depending on thickness of your chops).
While the pork cooks, stem and quarter the strawberries and add them to a blender (reserve 2-3 strawberries). Add in 2 chopped green onions, the honey, vinegar, and chipotles. Blend until completely smooth. Season with salt if needed. Thinly slice the remaining strawberries.
Once the pork is cooked, remove it from the oven and skillet and set aside to rest. Dice the remaining green onions and add the whites and light greens to the skillet (do not clean it out). Put it over medium heat. Add in the sauce and stir to scrape up all the fond from the skillet. Reduce for 5 minutes, and then add in the sliced strawberries. Return the pork to the skillet and coat in the sauce. Remove from heat and serve immediately.
Serve with roasted potatoes and/or a green vegetable garnished with remaining green onion greens.
