Chicken Caprese Sandwiches

Five Ingredients

1 French baguette

2 ripe tomatoes

6 oz ball fresh mozzarella

7 oz fresh basil pesto

2 lbs. chicken breasts

¼ cup olive oil

Preheat your oven to 425F.

Add half the olive oil to an oven-safe skillet over medium high heat and add the chicken breasts. Season with salt and pepper and sear on the first side for 4-5 minutes. Flip chicken and move to the oven to cook through (12-15 minutes more).

In the meantime, thinly slice the tomato and mozzarella and cut the baguette into 4 pieces lengthwise and then halve each one to create a top and bottom sandwich bun. You may need to use 2 baguettes depending on their length and size.

Drizzle the baguettes with the rest of the olive oil and place in the oven to toast. Remove once lightly browned and toasted.

Once cooked, slice the chicken thinly. Spread some pesto on the bottom slice of bread and lay down a bed of ¼ of the chicken followed by slices of the fresh mozzarella. Return to the oven for 3-4 minutes to melt the cheese. Remove and top with tomato and top piece of bread.

Serve immediately with a side salad, chips or fries.
